Reg and title transfer for out of state

Looking for some help, I bought an xsr 700 back in November, it was registered in Arizona and has only 6,300 miles on it. After purchasing it, and getting some more education. I learned I cannot register or even transfer the title to myself, a California resident, because it has under 7,500 miles. What available options do I have? I thought about getting the miles up by running it on a jack until the odometer reaches 7,500 or going to a private lot and rack up miles there. I feel stuck, I can’t ride it, can’t sell it. Now I’m stuck with a high interest loan and no bike to legally ride. Any advice would be highly appreciated.
